The secrets of Odette’s 3-Michelin-star success

Odette is called after a revered matriach in Chef Julien Royer’s life: his grandmother.

“She is admittedly somebody crucial to me, and the individual that really confirmed me how a lot ardour, pleasure, happiness and emotion you may give to individuals by meals,” he instructed CNBC.

Initially from central France, Royer rose to the highest of the culinary world in 2019, when Odette was awarded three Michelin stars and named the best restaurant in Asia.

The restaurant — housed in Singapore’s sprawling Nationwide Gallery — serves French-Asian delicacies in an ethereal eating room adorned with pink terrazzo, grey velvet and liberal touches of nickel and marble.

The restaurant, stated Royer, is designed to be a respite from the surface world.

“I would like individuals to come back in, to really feel comfy within the setting that we now have created. I would like individuals to have time and hopefully neglect about their day by day worries of life.”
